The outlet at Bukit Panjang Plaza will serve two varieties of the egg sponge cake: Original and Cheese. The cakes are made of milk, eggs, and flour, with no preservatives or colouring. The cakes, which take 80 minutes to bake, will be made fresh every day. Cakes that have not been sold after 12 hours will be discarded.
Also known as castella cakes, this baked treat craze originated in Nagasaki, Japan, and comprise sugar, flour, eggs, and starch syrup. The Taiwanese rendition, with additions such as cheese, inspired the cakes made by the Ah Mah brand.
In Malaysia, queues for the Ah Mah cakes have averaged at around 45 to 60 minutes, with more than 100,000 boxes of the cakes sold thus far at its 14 outlets.
Castella cakes have also been popular in Singapore, with stores such as Le Castella selling the Taiwanese version of the sponge pastry. The waiting time at Le Castella, located at Tampines 1 mall, has been known to last up to five hours.

Their chocolate version stands out in comparison to Original Cake’s Frozen Chocolate Cake thanks to its richer flavour. The Rocky Choc is iight and fluffy, has a distinct chocolatey taste, and yet does not come across as overly sweet. You can eat half a slab without any sign of queasiness setting in.
Out of all the stalls/cafes selling castella cakes, Ah Mah is probably the one that innovates most with flavours. They have several locally-inspired ones, such as Pandan and Milo Dinosaur, which are currently only available at their T4 outlet. They most recently launched Sunny Orange, which is light and refreshing, as well as the heavier Kopi Siu Dai.

Perhaps in a bid to bring back the crowd, the brand has launched a new cake with salted egg yolk.
The Golden Salted Egg Sponge Cake will be available at all outlets till Nov. 30, 2019.
This is basically a rendition of the signature light and fluffy castella cake with crumbled salted egg bits.
The signature batter is first layered with a smooth custard before golden salted egg crumble is sprinkled in between each layer.
Finally, almond flakes top the batter before it is baked.
